and welcome to the boards. I looked in the reviews section and rigging sections, and you are correct. Nobody has submitted any reviews or photos of their tandem rigged for angling, I'd sure like to change that. The only real suggestion have is to rent the kayak somewhere and try to peddle it solo, then with the fellow peddling partner and see how it goes.
Jeff is a cool guy, but I don't think he does rentals out of his store which can be bad when a perspective buyer wants to test out a kayak before purchasing one. That means the perspective buyer has to go to another dealer to test one out, which can mean a lost sale . As far as a Hobie product goes, I would buy one without reservation from what I have seen in them, they look like one of the best made kayaks out there for workmanship and materials. Hope this helps,
